Since my parmesan turkey meatballs were such a success with Eric (who is typically anti-ground turkey) I thought I'd push my luck and try a different turkey meatball recipe. How could I go wrong with hoisin sauce, soy sauce, and toasted sesame seeds? Answer is: I couldn't! With two successful ground turkey dishes, Eric says he'll happily eat any ground turkey dish I serve.

Ingredients:
Meatballs
20 ounces ground turkey
3 tablespoons plus1 teaspoon sesame oil, divided
1/2 cup Panko
1/4 teaspoon ground ginger
1 egg
2 garlic cloves, minced
2 tablespoons green onions, chopped
Toasted sesame seeds, garnish
Sauce
1/4 cup hoisin sauce
2 tablespoons apple cider vinegar
1 tablespoon soy sauce
2 garlic cloves, minced
1/2 teaspoon ground ginger
Directions:
Preheat oven to 400 degrees. Grease cookie sheet or line with parchment paper.
In a large bowl, combine turkey, 1 teaspoon sesame oil, Panko, ginger, egg, garlic and green onions. With your hands, combine ingredients well. Shape meat into golf ball size meatballs (I made about 20) and transfer them to the cookie sheet. Brush meatball with the 3 tablespoons sesame oil.
Bake for 20 minutes or until the meatballs are cooked through.
While the meatballs cook, prepare sauce. In a saucepan, stir hoisin sauce, vinegar, soy sauce, garlic and ginger together. Over medium heat, heat sauce until hot.
Pour sauce over meatballs, garnish with toasted sesame seeds, and serve.

Parmesan Turkey Meatballs
This recipe finally converted Eric--he has resisted ground turkey for years, but these Parmesan turkey meatballs have changed his mind. I've always been a fan of ground turkey, but even I will admit that it tends to dry out. But these meatballs couldn't have been more tender and moist and cheesy. We had all of four meatballs leftover and even a day old they were still delicious.

Ingredients:
20-ounce package of ground turkey
1/2 cup panko breadcrumbs
1/2 cup Parmesan cheese
2 tablespoons green onions, chopped
1 garlic clove, minced
1 tablespoon dried parsley
1 egg, scrambled
salt, to taste
pepper, to taste
3 tablespoon olive oil
Tomato sauce or marinara sauce
Directions:
Preheat oven to 400 degrees. Grease a cookie sheet with cooking spray.
In a large bowl, combine ground turkey, panko, Parmesan, green onions, garlic, parsley, egg, salt and pepper. Shape meat into golf ball size meatballs (I made 20) and transfer them to the cookie sheet. Brush meatball with olive oil.
Bake for 20 minutes or until the meatballs are cooked through. Serve with tomato or marinara sauce. (To freshen up my spaghetti sauce, I sauted some onions and garlic and threw in some oregano and basil. It's make a world of difference).

Turkey Burger with Avocado Sauce
I admit it, I have a love-hate relationship with Rachel Ray. I know some people absolutely adore her while others find her completely annoying. I'm usually intrigued by the recipes she comes up, but a lot of times I don't like how those same recipes actually turn out. But I have to say she nailed this turkey burger recipe. It has all the spices that I love, a generous helping of cheese (you all know how much we love cheese), and a ton of flavor.
Ingredients:
1 1/3 pounds ground turkey
1/2 of a medium red onion, finely chopped
1 cup sharp cheddar cheese, diced
1 rounded tablespoon chili powder
2 teaspoon cumin
1 serrano pepper, seeded and chopped
2 cloves garlic, minced
1/2 teaspoon black pepper
Directions:
Preheat a large nonstick skillet to medium-high heat.
Combine the ground turkey, onion, cheddar cheese, chili powder, ground cumin, serrano pepper, garlic, and pepper in a medium bowl and mix everything together with your hands. Separate meat into patties. Rachel Ray makes four patties, but I don't like my burgers that big so I made about seven patties.
Drizzle olive oil over the patties and place them in the hot skillet. Cook for 5 to 6 minutes on each side, or until the turkey is thoroughly cooked.
Rachel Ray made a cilantro cream to go with this burger. I used avocado sauce I previously made. It was incredible!

Spicy Cheese-Stuffed Turkey Burgers
I love turkey burgers. Eric loves hamburgers. Since I don't eat red meat, I had to come up with a turkey burger that Eric would love too. Eric is usually a good sport; he'll try anything once. But if he doesn't like it, there's rarely any revisiting that food. So I knew if I was going to get him to eat turkey burgers, they'd have to be damn good. In the world of Eric that means spicy and cheesy.
Ingredients:
20 ounces (1.25 pounds) of lean ground turkey
1/3 cup salsa
3/4 cup Monterey Jack cheese with jalapeno peppers, shredded
1-2 Serrano peppers, coarsely chopped
1/2 teaspoon black pepper
Directions:
In a large bowl, mix meat, salsa, cheese, peppers, and black pepper together. Form into about five patties that have 3/4-inch thickness. Heat your pan and cook over medium-high heat, about five minutes on each side, until thoroughly cooked. Serve on buns with ketchup, mustard lettuce, tomato, or onion. Eric likes to add a slice of cheddar cheese to his burgers.
My Education In Burger-Making:
I first starting playing around with ground turkey and turkey burgers three or four years ago. Since I didn't eat red meat, I didn't have any experience with how to make a burger, so I always left the patty making up to Eric. However, this time around he decided it was time to learn because this is what my burgers looked like:
Wrong thickness and falling apart. So here is what Eric taught me. Scoop up a good handful of meat. Form it into a patty, working with it until you hands warms up the meat a bit because this makes the patty stick together better. He likes the burgers with about a 3/4-inch thickness. Then he slaps the burger down into a hot skillet. Don't press down on the burger with the spatula right away or else you'll lose all the juices. Instead, wait a minute or two so the bottom of the burger cooks and seals in those juices. Let the patty cook for five or six minutes until the edges of the burger look cooked. You don't want to have to flip the burger more than once (something I'm terribly guilty of). Again, once you flip the burger, don't press down on it with the spatula right away. Cook that side for about five minutes then remove from heat.
We'll see how well I'll do the next time.
Variations:
It's really easy to take the spice up or down a notch with these burgers. For less spicy burgers use mild salsa and leave out the Serrano peppers. If you like things super spicy, add hot salsa and two chopped up peppers. We usually take the middle road--medium salsa and one pepper. Though the super spicy burgers are a nice change from time to time.
Also, instead of shredding the Monterey Jack cheese, you can cut it into little cubes so when you bite into the burger, you get a little burst of cheese. I prefer my burgers this way. Eric likes them with the shredded cheese. Plus, since Kraft now makes shredded Monterey Jack cheese with jalapeno peppers, it's easier to make them with shredded cheese.
