Loaded Baked Potatoes with Ham and Cheddar

I needed to use up the potatoes in the pantry before they went bad and decided to make loaded baked potatoes. We didn't have any bacon in the house, but we did have leftover Christmas ham. Oh my god, so good! It was a spiral ham with a brown sugar-maple glaze. The sweetness of the ham just worked with the cheese and green onions. Wow.


Ingredients:
4 russet potatoes, scrubbed
1 cup cooked diced ham
1 cup shredded cheddar cheese, divided
1/3 cup green onion, thinly sliced
1/2 cup sour cream (I used fat free)
salt, to taste
pepper, to taste

Directions:
Pierce each potatoes on top and bottom with fork. Place on a plate and cook for 5 minutes on high power. Flip potatoes over and cook for another 5 minutes.

Once potatoes are cool enough to handle, slice in half horizontally. Scoop the flesh out, leaving about 1/4-inch shell. Place the potatoes in a bowl and combine with ham, 1/2 cup cheddar cheese, green onion and sour cream. Season with salt and pepper to taste. Divide the potatoes evenly between the 8 potato skin shells. Sprinkle with the remaining cheese.

Microwave for another 1 to 2 minutes or until the cheese is melted. Or put under the broiler for 3 to 4 minutes.

Lemon Pepper Chicken Sandwiches

I so wished I had made more of the lemon pepper chicken so I could have made more of these sandwiches. I didn't know I could love lemon pepper chicken any more than I already did. The key to these sandwiches, other than the mouth-watering chicken, is the Italian seasoned canned tomatoes. Normally I'd used fresh tomatoes on a sandwich, but I didn't have any, and there were some leftover canned tomatoes in the fridge so I just went with it. Oh so good.



Ingredients:
3 lemon pepper chicken breasts, cooked and shredded (recipe 1, recipe 2--I used recipe 2)
8 pieces of sandwich bread
1 14.5-ounce can Italian seasoned canned tomatoes, drained
1 cup cheddar cheese, shredded
Mayo, optional
Onion, optional
Cucumber, optional

Directions:
Set oven to broil. Lightly grease baking sheet with cooking spray.

Shred the chicken breasts. Divide chicken, tomatoes, and cheese evenly among 4 slices of bread. Places the sandwiches open-faced on the baking sheet. Place the remaining 4 slices of bread on the baking sheet as well and broil until bread is toasted and cheese is melted, 1 to 2 minutes.

Remove from oven and add mayo, onions, or cucumber as desired.

Buffalo Chicken Quesadillas

Last weekend Eric and I made three dozen tortillas. After making my own--even though they are a bit of work--I just can't bring myself to buy tortillas from the grocery stores. Homemade ones are just that much better. And with Eric's help--one of us rolling out the tortillas, the other one cooking them--it went so much faster! Plus, it was fun cooking together. So after all our hard work, we had to enjoy a tortilla or two for dinner. I've been obsessed with buffalo sauce ever since I made buffalo chicken dip, so I made buffalo chicken quesadillas. Days later, Eric was still mentioning how good they turned out.


Ingredients: 10 ounces cooked chicken (I used canned chicken)
4 ounces cream cheese, softened
3-4 tablespoons buffalo sauce (depending on just how spicy you want it)
1 cup cheddar cheese, shredded
Green onions, chopped (optional)
8 6-inch tortillas

Dipping Options:
Blue cheese dressing
Sour Cream (Eric stirs hot sauce into his sour cream)

Directions:
Combine the chicken, cream cheese, and buffalo sauce in a bowl. Divide the mixture between four tortillas and spread it. If desired, sprinkle each tortilla with 1/4 cup cheese and with green onion. Place the remaining tortillas on top of each quesadilla.

Spray a skillet with cooking spray and heat over medium high heat. Cook each quesadilla for 2-3 minutes on each side or until the tortillas are browned and crisp.

Service with a side of blue cheese dressing or sour cream.

Individual Bacon and Cheese Quiche

I made this recipe because I had limited food in the house (it is once again time to go grocery shopping--I hate grocery shopping) but I happened to have everything I needed to make these mini quiches. Little did I know just how freaking amazing these things are! Cream cheese and eggs, a match made in heaven! When I asked Eric what he thought of them, he just looked down at his empty plate, chewing his last bite, then looked up at me again. Enough said.

Ingredients:
5 slices bacon, cooked and crumbled
1 8-ounce package cream cheese, softened
2 tablespoons milk
2 eggs
1/2 cup cheddar cheese, shredded
salt, to taste
pepper, to taste
1 can Pillsbury Grands refrigerated biscuits (8 count)

Directions:
Preheat oven to 375 degrees. Grease muffin tin with cooking spray.

In a small bowl, beat cream cheese until smooth. Add eggs and milk and continue to beat until well combined. Stir in cheddar cheese.

Roll out each biscuit into 5-inch rounds. Place a biscuit in a muffin cup and firmly press the dough to the bottom and sides of the tins. Sprinkle half of the crumbled bacon in the bottom of each muffin cup. Divide egg mixture evenly between the cups.

Bake for 21 to 26 minutes or until the egg filling has set and the edges of the biscuit cups are a golden brown. Sprinkle the remaining bacon on top of the mini quiches, lightly pressing it into the centers.

Remove cups from pan and serve.

Since I was only feeding Eric and myself, I didn't really want to make 8 individual quiches so I halved the recipe and made 4 quiches and 4 monkey bread muffins--dinner and dessert!

Ranch, Cheddar, and Bacon Potatoes

Potatoes are a pretty basic side dish for us. Usually mashed potatoes or roasted potatoes. This time I thought I'd change it up with this ranch, cheddar, and bacon potato dish. I mean, look at the title, everything in it sounds delicious--ranch, cheddar, bacon. It turned out so well (I don't know if I've ever had potatoes come out so fork-tender), it might just make it into our normal rotation of potato dishes.

Ingredients:
2 large white potatoes, diced into bite-size pieces
1/3 cup ranch dressing (the bottle, not the powder)
1/2 cup cheddar cheese, shredded*
3 pieces of bacon, cooked and crumbled (I used turkey bacon)**
1/2 tablespoon dried dill weed
1 green onion, chopped***
Salt, to taste
Pepper, to taste

Directions:
Preheat oven to 350 degrees.

Season potatoes with salt and pepper. In a large bowl, combine the ranch dressing, dill, cheese, and bacon. Add potatoes and toss until evenly coated.

Pour into an 9x9 casserole dish. Cover with tin foil and back for 60 minutes. Stir the potatoes halfway through.

After 60 minutes, remove the tin foil, stir, increase temperature to 400 degrees, and bake for another 15 minutes.

So I have a few of confessions to make about this recipe:
*After removing the foil, I sprinkled another handful of cheese (maybe 1/2 cup?) on top of the potatoes. We love our cheese.
**Like we love our cheese, we love our bacon. If you don't hold bacon dear to your heart like us, you could certainly only use 2 pieces of crumbled bacon. 
***I didn't have green onions on hand so I used yellow onion. However, I'd still recommend the green onion. They go so great with the ingredients in this recipe and really give it an appealing pop of color.

Cheese Puffs, Cheese Crisps, and Something In Between

I have a few different writing projects going right now (not to mention a wedding to plan--but the dress is taken care of!), and Eric has been warning me that I'm going to burn out. He keeps telling me to relax and actually take a full day off--something that is nearly impossible for me. But he's right. I'm getting burnt out. An avid gamer, he recommended shooting zombies, monsters, and whatever else in a video game for a good tension reliever. I decided to spend some time in the kitchen instead. Yesterday I made chocolate-covered cherries which I will be sharing with you next month (they need to age a bit). Today it was supposed to be a cheese cracker recipe I found on Pinterest. I probably have at least a dozen recipes for crackers bookmarked on my computer. Cheez-its, Triscuits, Wheat Thins, Goldfish, Cheese Nips . . . you name it, I have it in my archives. But for my first cracker recipe, I went with the easiest one I had, a five ingredient cheese cracker: cheddar, flour, cayenne, salt and rice krispies.

And I managed to screw it up.

I had a brain freeze while adding the flour. So I could either scrap the dough and the 2 cups of delicious cheddar cheese, or I could experiment and come up with something on my own. Since the recipe was already a disaster, I knew I couldn't make it any worse. With just cheese, butter, too much flour, salt, and cayenne in the bowl, the crumbly dough reminded me of my pastry dough recipe. Keeping that recipe in mind, I added some water and left out the rice krispies. Not sure how these would cook (I really need to invest in a book about the chemistry of baking), I played with different thicknesses. My first batch, which were the thickest, came out as delicious cheese puffs. I ate half a plate of them without realizing it. They were that good.

 The second batch were thinner but not thin enough. They ended up as a cross between puff and cracker.

I rolled the dough of my third and final batch as thin as I could possible get it. Those were the perfect cheddar cheese cracker. I ate too many of those, too.

Cheese Crisps
So instead of tossing that messed up recipe in the trash, experiment with it. You just might come up with a new recipe of your own.

Ingredients:
7 tablespoons unsalted butter, softened
2 cups shredded cheddar cheese
1 cup flour
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
3 to 5 tablespoons water

Directions:
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

On low, beat the butter and cheese together in a large bowl until well combined. Add in flour, cayenne, and salt and combine. Your dough will be crumbly. Add 1 tablespoon of water at a time until the dough sticks together. With your hands, roll the dough into a ball.


For Cheese Puffs: Roll your dough out to roughly a 1/4-inch thickness. Use a cookie cutter to cut out circles (or any shape you want, trees or candy canes for Christmas, bunnies for Easter, pumpkins for Halloween, etc). I didn't have a cookie cutter on hand so I used a napkin ring. Place dough on the cookie sheet and bake for 10 to 15 minutes or until the bottoms slightly brown. You can actually make thicker puffs or roll the dough into balls and bake. You just need to adjust the time.

For Cheese Crisps: Roll your dough out as thin as you can possible get it. So thin it's almost tearing. Some of my crackers had little holes in them where the dough did rip a little. Cut out small circles and place them on the cookies sheet. Bake for 8 to 10 minutes or until the crackers begin to brown.


These really do come out as crisp as any cracker. These are so simple that I can't wait to experiment with flavor. Add thyme or rosemary. You can also make these (or the puffs) look pretty by placing an herb in the center of the cracker before baking.

Eric came home from work and I made him try my puffs, crisps, and in betweens. He said they tasted just like Cheez-its then walked away with the container.
