10 Desserts for the Fourth of July

1. Red Wine Ice Cream


Whenever I'm invited to a barbecue, everyone requests that I bring my red wine ice cream. We're half way through June and I've already had multiple requests.

2. Whiskey Chocolate Cookies


My husband made these for my birthday (July 5th!) last year and we've been made them many times since.

3. Smores Pie


Another one of my husband's desserts. He's made it for my birthday, his mom's birthday, just because . . . besides nothing says summer likes smores. (And there are a lot more smores desserts to come!)

4. Drunk Cherry Chocolate Cake


Black cherries. Whiskey (brandy is good too!). And chocolate. These is no way this cake couldn't be amazing.

5. Smores Cups


These little things are super easy to make and addictive.

6. Baileys White Chocolate Chip Cookies



I'm not much of a drinker, neither is Eric, but we sure love our boozy desserts. The Baileys adds some extra yumminess to these cookies.

7. Smores Sandwich Cookies



Out of all smores cookies, these guys are my husband's favorite!

8. White Chocolate Hazelnut Cream Pie



This cream pie is light and airy and perfect for a Fourth of July barbecue.

9. Butterscotch Cookies



I recently made these again to bring to a get-together and they were a huge success. Not a single one was left on the plate.

10. Smores Cookies



I told you there were a lot of smores desserts on this list. Nothing says summer like smores!

5 Favorite Summer Recipes 2014

Labor Day weekend has passed and the kiddies are back in school; that means summer is over--even if the temps are still in the 80s. To say goodbye to summer, here are some of our summer favorite recipes.



1. Parmesan Veggie Crisps
    Made with shredded zucchini and carrots, these crisp chips are not only healthy but delicious, and pair  
    perfectly with hummus.


Ingredients:
1/2 cup grated zucchini
1/2 cup grated carrot
1/2 cup grated Parmesan cheese
seasonings, if desired (garlic powder, rosemary, etc.)

Directions:
Remove the excess moisture from the zucchini and carrots by placing them between a couple of paper towels and squeezing out the extra liquid.

Mix all the ingredients together. Line a microwave-safe plate with waxed paper and spray with cooking spray. Spoon about a tablespoon of the mixture on a plate then flatten with the bottom of the spoon. Repeat with the rest of the mixture. Microwave for 2 to 3 minutes on High. Every microwave is different so start at 2 minutes, then add 30 seconds as needed. 2 minutes worked perfectly for me. Allow to cool about a couple of minutes before serving.

2. Smores Cookie Cups
     I've made quite a few smores desserts but these cookies are without a doubt one of the best. They are
     seriously addicting.



Ingredients:
1 package Ready to Bake Pillsbury Sugar Cookies (or this sugar cookie recipe, halved)
4 tablespoons chocolate spread (I used Hershey, but Jiffy makes one too)*
4 tablespoons marshmallow fluff
3 graham crackers, crumbled

Directions:
Preheat oven to 350 degrees if using refrigerated cookie dough. (If using my sugar cookie recipe, preheat to 375 degrees). Grease a two mini muffin tin with cooking spray.

Place crumbled graham crackers in a bowl. You can crumble them as fine or as coarse as you like.

Roll each section of refrigerated cookie dough (approximately a tablespoon of cookie dough from scratch) into a ball. Roll each ball into the graham cracker crumbs and place in the muffin tin.

Bake for approximately 15 minutes at 350 or 7-8 minutes at 375 (for scratch).

As soon as you remove the cookies from the oven, press the centers in gently using the end of a wooden spoon. Allow the cookies to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.

Once cooled, spoon 1/2 teaspoon of chocolate spread into each cup. Spoon 1/2 teaspoon marshmallow fluff on top of the chocolate spread. Place cookie cups onto a cookie sheet.

Set oven to broil and pop the cookies back into the oven to toast the marshmallow. This only takes about 30 seconds so don't walk away or even look away from your cookies or else you risk burning them. When the marshmallow reaches the desired shade of golden brown, remove from oven.

Serve or store in an airtight container at room temperature.

3. Quick and Easy Chicken Parmesan
      I love chicken parmesan and have tried a lot of recipes over the years. I never would have expected one
      this simple would have been the winner.


Ingredients:
4 chicken breast
3/4 cup panko
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 cup Parmesan cheese
2 tablespoons butter, melted
1 cup mozzarella cheese, shredded
1 cup marinara sauce
cooking spray

Directions:
Preheat oven to 450 degrees. Grease a cookie sheet with cooking spray.

In a shallow dish, combine, panko, oregano, basil, and Parmesan. Place melted butter in a second shallow dish. Set aside.

Slice the chicken breasts in half horizontally so you have 8 thin chicken breasts. Dip the chicken breast in the butter then coat it in the panko mixture. Place on cookie sheet and repeat with the rest of the chicken.

Lightly spray a little cooking spray on the top of the chicken breasts. Bake for 20 minutes. Flip chicken over and bake for another 5 minutes or until the chicken is cooked through.

Remove from oven and spoon 1 tablespoon of sauce over each chicken breast and then sprinkle with mozzarella, dividing the cheese equally between the breasts.

Bake for 5 minutes or until the cheese is melted.

4. Soy Wax Beans with Sesame Seeds
     I don't think I would have ever bought wax beans on my own. But my mother-in-law gave me some and
     had to figure out what to do with them. Little did I know that I'd fall in love with them. We are easily
     going to eat these beans every summer.


Ingredients:
1 pound wax beans, trimmed
1 tablespoon olive oil
2 tablespoons soy sauce
1 pinch ground ginger
1 teaspoon lemon juice
1/2 teaspoon brown sugar, packed
1/2 tablespoon toasted sesame seeds

Directions:
Preheat oven to 450 degrees.

Toss the wax beans with olive oil on a rimmed baking sheet. Bake for 15 minutes or until beans are tender and browned in spots. Toss beans halfway through.

Mix together soy sauce, ginger, lemon, and sugar in a medium bowl. Add roasted beans and toss. Garnish with sesame seeds.

5. Strawberry Chocolate Chips Muffins
     These muffins were something a little different than your run-of-the-mill muffin and turned out to be a huge
     hit in Eric's office.


Ingredients:
Muffin
1 1/2 cup flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 1/2 cup fresh strawberries, diced
1 cup dark chocolate chips

Crumble Topping
1 tablespoon butter, room temperature
1/3 cup brown sugar, packed
2 tablespoons flour
1/4 teaspoon ground cinnamon

Directions:
Preheat oven to 400 degrees. Line 12-cup muffin tin with paper liners.

In a small bowl, combine all the crumble topping ingredients until you have a texture of coarse crumbs. Set aside.

In a large bowl, whisk together flour, sugar, salt, and baking powder.

In a second bowl, combine egg, oil, and milk. Pour the wet ingredients into the dry ingredients and stir (be careful not to over mix). Fold in blueberries.

Divide equally between the 12 cups. Generously sprinkle crumble on top of the muffins. Bake for 20 to 25 minutes or until the center of the muffins set.

Our Favorite Summer Recipes 2013

Well, it's Labor Day weekend and the end of summer. I don't quite know where this summer went. But I am eager for fall. Cooler temperatures, autumn leaves, comfy sweaters and cute boots. It's my favorite season for cooking and baking. Apples and pumpkins, cinnamon and cloves, so much yummy goodness. Plus, Eric and I are getting married September 20th!

 As I goodbye to summer, I put together a list of our favorite summer recipes.

1. Smores Pie
Eric made this for the Fourth of July/my birthday. There are millions of smores variations out there--cookies, cakes, bars, pies . . . but I don't think any of them hold a candle to this particular smores pie. I knew as soon as I took my first bite that this is a dish we will be making every summer from now on.


Ingredients:
1 store-bought graham cracker pie crust
1 cup semi-sweet chocolate chips
1 cup heavy cream
1 egg, room temperature
pinch of salt
7-ounce (a little less than a cup) marshmallow fluff

Directions:
Preheat oven to 350 degrees.

Pour the chocolate chips in a large bowl. In a heavy saucepan bring heavy cream to a boil. Pour the cream over the chocolate chips and let it sit for 1 minute.

Whisk the chocolate and cream together until it's well combined and smooth. Add the egg and a pinch of salt to the mixture and whisk until well incorporated. Pour the chocolate mixture into the pie crust.

Cover the edges of the pie crust with foil and bake for 20 to 25 minutes or until the chocolate is almost set--the center should be a little bit jiggly.

Place the pie on a rack and allow to cool for about one hour.

Add the marshmallow fluff on top of the chocolate layer and smooth with a spatula. Set the oven to broil and place the pie back in the oven for just 2 or 3 minutes or until the top of the fluff turns a golden brown.

Allow pie to cool for about ten minutes before serving.

2. Cheesy Tomato Zucchini Bake
If you read this blog, you know I have a mad love for zucchini. But even I was surprised by how much I loved this zucchini bake. I could easily made it a meal on its own--but that might just be me! I also love that this recipe is so easy to change up. Switch out some spices and you have a new delicious dish. 


Ingredients:
1 1/2 cups cheddar cheese, shredded
1/3 cup Parmesan cheese, grated
1/2 teaspoon basil
2 garlic cloves, minced
salt, to taste
pepper, to taste
2 medium zucchinis, thinly sliced (use a mandolin)
5 plum tomatoes, thinly sliced (use a mandolin)
2 tablespoons onion, minced
3/4 cup panko

Directions:
Preheat oven to 375 degree. Spray a 9x9-inch casserole dish with cooking spray.

In a large bowl combine cheddar, Parmesan, basil, garlic, onion, salt, and pepper. Set aside.

Cover the bottom of the casserole dish with the zucchini slices. Sprinkle about a quarter of the herb mixture on top of the slices. Add a layer of tomatoes using about half of the sliced tomatoes the sprinkle with a quarter of the herb mixture. Repeat the layers.

Sprinkle the panko on top of the casserole.

Cover the dish with foil and bake for 25 minutes. Remove foil and cook for another 20 minutes or until the vegetables are tender and the panko topping is crisp.


3. Homemade Pita Chips
This is one of those recipes I've been making for years, but never managed to get onto my blog until this past summer. These chips are easy to make and so much better than store-bought pita chips. I got my mom hooked on them a few summers ago and Eric can easily eat the entire batch himself in a single sitting if he lets himself.



Ingredients:
pita bread
olive oil
seasonings (I usually use garlic powder and a dash of cayenne pepper)

Directions:
Preheat oven to 375 degrees. Either spray a cookie sheet with cooking spray or lay a piece of parchment paper on it.

Pour some olive oil into a small bowl, add seasonings to taste, and mix to combine. Cut the pita bread into 6 or 8 wedges, depending on how large you want your chips. Separate each wedge into two pieces. With  pastry brush (or your fingers) lightly coat each side of the pita bread with the olive oil mixture and place on the cookie sheet in a single layer.

Bake for 7 to 10 minutes or until the chips turn a golden brown. Allow to cool and store in an airtight container.
 


4. Jalapeno Popper Wontons
Oh wonton wrappers, you are so versatile. I can turn you into cream cheese rangoons, homemade pizza rolls, or even chocolate-hazelnut ravioli. Eric loves jalapeno poppers, and these jalapeno wonton poppers are particularly addicting.


Ingredients:
16 wontons
4 ounces cream cheese, soften
1/4 cup cheddar, shredded
2 jalapenos, finely chopped

Directions: 
Preheat oven to 375 degrees.* Line a cookie sheet with parchment paper or spray with cooking spray

In a bowl mix, mix together cream cheese, cheddar, and jalapenos. Scoop about 1 teaspoon of the cheese mixture into the center of the wonton. Wet all four edges of the wonton and bring the four corners together in the center of the wonton and press the seams together to seal. Place on the cookie sheet and repeat with the rest of the wonton wrappers.

Bake for 6 to 8 minutes or until they turn a golden brown.

*You can also deep fry these. Eric is always after me to fry my wonton creations. He loves everything fried. I, on the other hand, try to stay away from fried foods and love that these can be baked.

Eric also suggested sprinkling parmesan cheese on top of them. I thought about adding crumbled bacon to the inside. Just some ideas to play with.

5. Tomatoes Stuffed with Chicken, Herbs, and Cheese
Made with surplus tomatoes from my mom's garden, I didn't follow any recipe when concocting these. I just went with the ingredients that we had in the house. I didn't expect them to make it onto the blog because I assumed I would have to play with them a bit to get them just right. But they came out perfect and I can't wait to experiment more with stuffed tomatoes. 

Ingredients:
4 tomatoes (I used 2 beefsteak, 2 early girls)
kosher salt
4 tablespoons minced onion
2 garlic cloves, minced
2 pieces of bacon (I used turkey bacon)
1 cup cooked chicken, shredded or cubed 
1/2 cup Italian herb breadcrumbs
1/4 cup Parmesan cheese, grated
1 tablespoon dried basil
1/2 cup Italian blend shredded cheese (or mozzarella)

Directions:
Preheat oven to 400 degrees. Grease a cookie sheet with cooking spray.

Cut off the top of the tomatoes. Scoop out the innards with a spoon. You can either reserve them for another use or discard them. Lightly sprinkle the insides with salt and set them upside down on a paper towel to extract juices.

While the tomatoes drain, cook the bacon; set aside. Reserve a little bit of bacon grease and saute the onions and garlic in it until they are golden brown. In a medium bowl, mix together the chicken, breadcrumbs, Parmesan, basil, garlic, and onions.

Place the tomatoes on the cookie sheet and divide the chicken mixture between the four tomatoes. Next, divide the cheese between the tomatoes, sprinkling it on top. Crumble the bacon and sprinkle it on top of the cheese. Bake for 20 minutes or until the tomatoes are cooked and the cheese is melted.

Jalapeno Popper Chicken

A week ago Eric and I celebrated our 5th anniversary (our last anniversary before we get married!) and went to Ukai Hibachi Grill and Sushi Bar to celebrate. As an appetizer we had tuna jalapeno poppers. They were fricking amazing--as is all their food there. Anyway, it got me thinking about jalapeno poppers and I knew somewhere in my hundreds (maybe thousands) of bookmarked recipes, I had a jalapeno chicken recipe. I found, and made it, and it was absolutely delicious. I will definitely be making it again.

Jalapeno Popper Chicken  with Salt and Vinegar Roasted Potatoes
Ingredients:
1/2 cup breadcrumbs
2 teaspoons olive oil
4 teaspoons taco seasoning
1 egg
3 ounces cream cheese (I used reduce fat)
1/4 cup cheddar cheese, shredded
1 jalapeno pepper, seeds and ribs removed, minced
2 chicken breasts.

Directions:
Preheat oven to 375 degrees. Spray a rimmed cookie sheet generously with cooking spray.

In a small skillet, combine breadcrumbs and olive oil over medium heat. Cook until golden brown, stirring often. Pour into a shallow dish and stir in taco seasoning.

In a second shallow dish, lightly beat the egg.

In a third bowl, mix together cream cheese, cheddar cheese, and minced jalapenos.

Cut a slit into the side of each chicken breast to make a pocket. Stuff each of the breasts with half of the cream cheese mixture. Secure with toothpicks if necessary.

Dip the breasts into the eggs then into the breadcrumbs. Make sure to completely coat each chicken breast, and then place them on the prepared cookie sheet. Bake for 25 to 30 minutes or until the juices run clear.

Eric said that the whole house smelled like this dish and he couldn't wait to try some. He wasn't disappointed. However, he was wondering if there was a way we could fry them next time. That boy wants to fry everything!

On a side note, I highly recommend drinking a margarita with this dish. Together they make a perfect summer pairing.
